Back-to-School Easy Dinners for Busy Families

Back-to-school nights are busy enough—discover simple, family-friendly dinner ideas that make feeding everyone easier, faster and a little less stressful!

As families settle into the new school year, evenings quickly fill up with homework, sports, activities and busy schedules. Between getting kids to school in the morning and shuttling them to practices and activities after school, finding time to prepare dinner can sometimes feel like one more thing on an already full schedule.

For families in San Diego Country Estates, back-to-school nights don't have to mean complicated meals or takeout. A little planning and a few simple dinner ideas can make it easier to get everyone fed without spending hours in the kitchen.

Keep It Simple

One of the easiest ways to make weeknight dinners manageable is to focus on meals that require just a few ingredients and can be customized for different tastes.

Taco Night is an easy family favorite. Set out seasoned ground beef or chicken, tortillas, shredded cheese, lettuce, tomatoes, salsa and other favorite toppings. Everyone can build their own tacos, making it a particularly good option for families with picky eaters. Sheet-Pan Chicken and Vegetables is another simple option. Place chicken breasts or thighs and vegetables such as broccoli, carrots, zucchini or bell peppers on a baking sheet. Add your favorite seasoning and roast everything together for an easy meal with minimal cleanup. Build-Your-Own Pasta Bowls can also be prepared quickly. Cook a favorite pasta and offer a choice of marinara sauce, Alfredo sauce, grilled chicken, meatballs, cheese and vegetables. Children can choose what they want while parents can add extra vegetables or protein.

Make Dinner Ahead of Time

Busy afternoons are often easier when dinner is already partially prepared. Consider cooking extra chicken, ground beef or taco meat on the weekend and using it for several meals throughout the week. Cooked chicken can become tacos one night, sandwiches the next and a salad or rice bowl later in the week. Casseroles, soups and chili are also great make-ahead meals. Prepare them on a less hectic day, refrigerate or freeze them, and simply heat them up when the evening gets busy.

Don't Forget the Slow Cooker

The slow cooker can be a back-to-school lifesaver. Toss ingredients in before the day gets busy, and dinner can be ready when everyone gets home.

Try slow-cooker shredded chicken for tacos, sandwiches or rice bowls, or make a simple chili with ground beef or turkey, beans, tomatoes and your favorite seasonings.

Quick Dinners for Sports Nights

For families rushing from school to volleyball, soccer, horseback riding, 4-H activities or other evening commitments, portable and quick meals can be especially helpful.

Some easy options include:

Chicken quesadillas with fruit

Turkey and cheese wraps with vegetables

Personal pizzas made with naan or English muffins

Rotisserie chicken with microwaveable rice and steamed vegetables

Grilled cheese sandwiches with tomato soup

Breakfast-for-dinner with scrambled eggs, toast and fruit

Chicken or beef rice bowls

Baked potatoes with a variety of toppings

The key is not necessarily making dinner from scratch every night. Combining a few convenience foods with fresh ingredients can create a balanced meal without adding a lot of extra work.

Create a Family Dinner Routine

Back-to-school schedules can change from day to day, so having a few reliable meals in your rotation can take some of the stress out of deciding what to make. Try choosing five or six family favorites and assigning them to different nights. For example, Monday could be taco night, Tuesday pasta, Wednesday slow-cooker dinner, Thursday leftovers and Friday homemade pizza.

Getting children involved can help, too. Older kids can help prepare ingredients, set the table or assemble their own meals, while younger children can help with simple tasks. And when the schedule gets especially hectic, remember that dinner doesn't have to be elaborate. A simple meal shared around the table—even if it's only for 20 minutes—can be a welcome pause in a busy school day.

As families across San Diego Country Estates settle into another school year, a little planning can go a long way toward making weeknight dinners easier, less stressful and more enjoyable for everyone.
